Marinate tomatoes: Toss diced tomatoes with 4 tbsp olive oil, salt, pepper, roughly torn basil leaves, and vinegar or lemon juice if using. Let sit for 10–15 minutes so flavours meld.

Toast bread: Slice the loaf diagonally into 1–1.5 cm thick slices. Brush both sides lightly with remaining olive oil, then toast on a grill pan or under the oven grill until golden and crisp on the edges.

Rub with garlic: Immediately after toasting, rub the cut side of a garlic clove over the warm surface of each bread slice — the heat releases the garlic’s aroma perfectly.
