
Vegan Grilled Eggplant (Melanzane Grigliate)
Melanzane Grigliate is a timeless Italian antipasto or side dish: fresh eggplant scored and grilled until smoky, tender, and richly caramelised. This fully vegan version uses no animal products at all β letting the natural deep flavour of the eggplant shine, enhanced only by good olive oil, garlic, and herbs. - 3β4 medium firm purple eggplants,, 4β5 tbsp extra virgin olive oil
- 2 garlic cloves, thinly sliced or minced (optional)
- Coarse salt to taste,, Freshly ground black pepper to taste
- 1 tsp dried oregano or fresh chopped basil
- Lemon juice or balsamic vinegar (optional, for brightness)
- Fresh parsley or basil for garnish

Prep eggplant: Wash and trim eggplants, cut lengthwise into halves. Score the flesh in a diamond pattern without cutting through the skin β this helps heat and flavour penetrate evenly. Sprinkle lightly with salt, rest for 10β15 minutes to draw out bitter moisture, then pat dry thoroughly with kitchen paper.

Season: Brush all cut surfaces and skins generously with olive oil. Scatter with garlic, herbs, extra salt, and black pepper.

Grill: Preheat a grill pan or barbecue over medium heat. Place eggplant cutβside down first; cook 6β8 minutes until well marked, golden, and firm. Flip carefully and cook another 8β10 minutes until the flesh is soft all the way through and skins are lightly charred.

Serve: Arrange on a platter, drizzle with a little extra oil or lemon juice if desired, and top with fresh herbs. Enjoy warm or at room temperature.
