Sev Puri is a vibrant, iconic Indian street snack: crisp flat puri shells topped with spiced potatoes, tangy chickpeas, layered with fresh herbs, sweet‑sour date‑tamarind chutney, zesty mint chutney, and finished with a generous pile of thin, crispy sev noodles. - 12–15 ready‑made round crisp puris
- 2 medium potatoes, boiled, peeled, and finely diced
- ½ cup cooked chickpeas, drained and lightly crushed
- ½ tsp chaat masala,, ½ tsp roasted cumin powder
- Pinch of red chilli powder,, Salt to taste

- ½ cup sweet date‑tamarind chutney,, ½ cup mint‑coriander green chutney
- ÂĽ cup finely chopped red onion,, ÂĽ cup finely chopped tomato
- 2 tbsp fresh pomegranate arils (optional)

- 1 cup thin crispy sev (gram‑flour noodles),, 2 tbsp fried chickpea nuts (optional)
- Fresh coriander leaves for garnish,, Extra chaat masala and lemon juice to finish

Season the filling: Toss diced potatoes and chickpeas with chaat masala, cumin, chilli powder, salt, and a squeeze of lemon juice. Mix well and set aside for 5 minutes to let flavours blend.

Arrange: Lay the crisp puris out on a large platter or plate.

Layer: Place a little spiced potato‑chickpea mix onto each puri. Top with onion, tomato, and pomegranate if using.

Add chutneys: Drizzle generously with both the sweet tamarind chutney and green mint chutney over the top.

Top & serve: Pile plenty of sev over every puri until well covered. Scatter with fried chickpeas, fresh coriander, and a final dust of chaat masala. Enjoy immediately while the puri and sev stay perfectly crisp.
