Vegan Swiss Pizokel

Pizokel is a traditional specialty from the Swiss canton of Graubünden: soft, tender, hand‑shaped dough strips made from simple flour and water, tossed with seasonal greens, green beans, and savoury flavours. This fully vegan version skips eggs and dairy entirely, keeping the rustic, comforting texture and hearty appeal of the original dish. It is naturally wholesome, filling, and perfect as a warming main meal or substantial side.

  • #Pizokel Dough;
  • 250g plain flour or spelt flour,, ½ tsp salt,, 150–160ml warm water
  • 1 tbsp olive oil,, ½ tsp turmeric (optional, for pale golden colour)
  • #Vegetable & Savoury Mix;
  • 150g green beans, trimmed and cut into short lengths
  • 100g spinach or chard, roughly chopped
  • ½ small cabbage or savoy cabbage, shredded
  • 1 small onion, finely diced.. 2 garlic cloves, sliced
  • 2 tbsp olive oil or vegan butter.. ½ tsp dried thyme or marjoram
  • Salt and black pepper to taste
  • Optional: crispy plant‑based bacon bits or toasted nuts for topping

    Make the dough: Mix flour, salt, and optional turmeric in a bowl. Gradually stir in warm water and oil, then knead for 5–7 minutes until smooth, elastic, and no longer sticky. Cover and rest for 10 minutes.

    Shape: Roll the dough out thinly on a floured surface, then cut into thin, irregular strips or ribbons about 1cm wide.

    Cook the pizokel: Bring a large pot of salted water to a gentle boil. Drop the dough strips in carefully, simmer for 3–4 minutes until they float to the surface, then drain well.

    Sauté vegetables: Heat oil or butter in a large pan. Fry onion until soft, add garlic and herbs, then cook green beans for 3–4 minutes. Add cabbage and spinach, stir until wilted and tender‑crisp.

    Combine: Toss the cooked pizokel into the pan with the vegetables. Season generously with salt and pepper, and stir gently over low heat for 1–2 minutes to blend all flavours.

    Serve: Top with crispy plant‑based bacon or toasted nuts if desired, and enjoy warm.
