Swiss‑Style Niçoise Salad adapts the classic French salad with wholesome, seasonal ingredients favoured across Switzerland: crisp lettuce, tender new potatoes, sweet green beans, juicy tomatoes, earthy beetroot, briny olives, and protein‑packed roasted chickpeas in place of tuna or eggs. Tossed with a bright herb vinaigrette, it is vibrant, balanced, naturally vegan, and perfect as a light lunch, substantial side, or complete main meal.

🛒 Ingredients
- #Salad Base;
- 4 cups mixed crisp lettuce (romaine, butter lettuce, or leaf lettuce)
- 400g small new potatoes, halved or quartered
- 200g green beans, trimmed.. 150g cooked chickpeas, patted dry
- 1 large beetroot, cooked and peeled.. 1 cup mixed cherry tomatoes, halved
- ½ cup black olives (Kalamata or Nicoise), pitted
- 2 tbsp sunflower seeds or pumpkin seeds (optional)
- #Herb Vinaigrette;
- 4 tbsp extra virgin olive oil,, 2 tbsp white wine vinegar or apple cider vinegar
- 1 tsp Dijon mustard.. 1 clove garlic, minced.. 1 tsp dried thyme or oregano
- Salt and black pepper to taste.. Fresh parsley or chives, chopped

Cook vegetables: Boil potatoes in salted water for 12–15 minutes until just tender; drain and cool slightly. Blanch green beans in boiling water for 2–3 minutes until crisp‑tender, then rinse under cold water to keep bright colour.

Roast chickpeas (optional): Toss chickpeas with a little oil, salt, and pepper; bake at 200°C / 400°F for 10 minutes until lightly golden and crunchy.

Prep remaining ingredients: Slice beetroot into matchsticks or wedges, halve tomatoes, and pit olives.

Make dressing: Whisk olive oil, vinegar, mustard, garlic, herbs, salt, and pepper until smooth and emulsified.

Assemble: Arrange lettuce on a large platter, then arrange potatoes, green beans, chickpeas, beetroot, tomatoes, and olives in sections or scattered over the greens.
