Vegan Bircher Muesli

Bircher Muesli is a wholesome, nourishing breakfast invented by Swiss physician Maximilian Bircher‑Benner, made by soaking rolled oats overnight until soft and creamy. This fully vegan version uses plant milk instead of dairy, sweetened naturally with fruit, and topped with fresh juicy berries and smooth nut butter. It is light yet filling, packed with fibre and nutrients, and ready to grab and go in the morning.

🛒 Ingredients

  • #Base Muesli;
  • 120g rolled oats (not instant)
  • 180–200ml unsweetened plant milk (oat, almond, or soy works best)
  • 1 small apple, grated coarsely (with skin for extra fibre)
  • 1 tbsp lemon juice,, 1 tbsp raisins or sultanas (optional)
  • 1 tbsp chopped almonds or walnuts,, 1 tsp chia seeds or flax seeds (optional)
  • ½ tsp vanilla extract,, 1 tsp maple syrup or agave (optional, for extra sweetness)
  • #To Serve;
  • Fresh strawberries, sliced.. Fresh blueberries
  • 2 tbsp smooth peanut butter, almond butter, or cashew butter
  • Extra drizzle of plant milk or maple syrup if desired

    Combine base ingredients: Place rolled oats, grated apple, lemon juice, raisins, nuts, seeds, vanilla, and sweetener (if using) into a bowl or jar. Pour in the plant milk and stir well so all oats are fully submerged.

    Soak: Cover and place in the fridge for at least 4 hours, or ideally overnight. The oats will absorb the liquid and become soft, thick, and creamy.

    Adjust consistency: Before eating, stir well and add a splash more plant milk if you prefer it thinner, or a little extra oats if too wet.

    Assemble: Spoon into bowls, swirl or drizzle your chosen nut butter over the top, and pile generously with fresh strawberries and blueberries.

    Serve: Enjoy chilled straight from the fridge — perfect for a quick, healthy, and delicious start to your day.
