
Vegan Fattoush
Fattoush is a vibrant, refreshing salad beloved across Lebanon, Syria, and the Eastern Mediterranean β a colourful mix of crisp seasonal vegetables and toasted pita croutons, all tossed in a bright, tangy sumac dressing. This fully vegan version keeps the signature balance of fresh crunch, herby aroma, and zesty flavour without any dairy or animal products. π Ingredients
- #Salad Base;
- 2 whole wheat or plain pita breads, torn into small pieces
- 4 cups mixed fresh greens (arugula, baby spinach, romaine, or purslane)
- 2 ripe tomatoes, diced.. 1 medium cucumber, diced
- 3β4 radishes, thinly sliced.. Β½ small red onion, finely chopped
- ΒΌ cup fresh parsley, chopped.. ΒΌ cup fresh mint leaves, roughly torn
- #Sumac Dressing;
- 4 tbsp extra virgin olive oil,, 2 tbsp lemon juice,, 1.5 tbsp sumac powder
- 1 tsp pomegranate molasses (optional, for depth)
- 1 clove garlic, minced.. Salt and black pepper to taste

Crisp the pita: Toast the torn pita pieces in a dry pan or bake at 180Β°C / 350Β°F for 5β7 minutes until golden and crunchy; set aside to cool.

Make dressing: Whisk olive oil, lemon juice, sumac, pomegranate molasses, garlic, salt, and pepper until well combined.

Assemble: Place all fresh vegetables, herbs, and greens in a large bowl.

Combine: Drizzle most of the dressing over the salad and toss gently. Scatter the crispy pita on top just before serving β this keeps them crunchy.

Finish: Drizzle with the remaining dressing and an extra sprinkle of sumac. Serve immediately.
