Honey‑Glazed Roasted Eggplant is a delicious balance of tender, melt‑in‑your‑mouth texture and a glossy, sticky sweet‑savoury coating. This fully vegan version uses maple syrup, date syrup, or agave nectar instead of honey to create that beautiful caramelised finish, paired with aromatic garlic and warm spices. It makes a wonderful main dish, hearty side, or appetiser — rich, comforting, and full of flavour without any animal products.

🛒 Ingredients
- 2 medium eggplants, cut into thick rounds or wedges
- 3 tbsp extra virgin olive oil
- 4 tbsp pure maple syrup / date syrup / agave nectar (vegan honey alternative)
- 2 tbsp light soy sauce or coconut aminos
- 2 garlic cloves, finely minced.. 1 tbsp apple cider vinegar
- ½ tsp smoked paprika or black pepper.. Pinch of sea salt
- Garnish: fresh coriander or parsley, toasted sesame seeds

Make the glaze: In a small bowl, whisk together your chosen sweet syrup, soy sauce, garlic, vinegar, paprika/pepper, and a tiny pinch of salt until smooth.

Prep the eggplant: Brush both sides of the eggplant slices with olive oil. Lightly season with salt, set aside for 5 minutes, then pat dry gently with paper towel if needed.

First roast: Preheat oven to 200°C / 400°F. Arrange eggplant on a lined baking tray and roast for 15 minutes until soft and lightly golden underneath.

Glaze: Flip the slices over, brush generously with the glaze on both sides, and set aside a little extra glaze for later.

Finish roasting: Return to the oven for 8–12 minutes more, brushing with remaining glaze halfway through, until the eggplant is tender, shiny, and caramelised.

Serve: Transfer to a plate, scatter with fresh herbs and sesame seeds, and enjoy warm.
