- 1 large red onion, peeled and sliced into very thin halfβrings
- Β½ cup apple cider vinegar or white wine vinegar
- Β½ cup warm water.. 1 tbsp sumac powder (plus extra for sprinkling)
- 1 tsp sea salt.. 1 tsp maple syrup or agave nectar (optional, to balance acidity)
- 1 small handful fresh mint or parsley leaves, roughly chopped

Prep the onion: Place thinly sliced onion into a clean glass jar or bowl.

Make brine: Whisk together warm water, vinegar, sumac, salt, and sweetener (if using) until salt and sumac dissolve fully.

Pour & soak: Pour the warm brine over the onion so all slices are completely submerged. Scatter fresh herbs and extra sumac on top.

Rest: Let cool to room temperature, then cover and refrigerate for at least 30 minutes β the longer it sits, the deeper the colour and flavour will develop.

Serve: Ready to use straight away. Keeps well in the fridge for up to 2 weeks.
