- 4 medium round pita breads,, 6–7 tbsp pizza sauce or marinara sauce
- 150–200g dairy‑free mozzarella or melty vegan cheese
- 8–10 cherry tomatoes, halved.. ½ small zucchini, thinly sliced
- 4–5 button mushrooms, sliced.. ½ yellow bell pepper, diced
- 3–4 tbsp homemade or store‑bought vegan basil pesto
- Fresh basil leaves for garnish.. Extra virgin olive oil
- Salt and black pepper to taste

Preheat oven: Heat oven to 220°C / 425°F. Line a baking tray with parchment paper.

Base: Lay the pita breads on the tray. Spread tomato sauce evenly over each one, leaving a small border around the edge.

Top: Sprinkle with vegan cheese, then arrange cherry tomatoes, zucchini, mushrooms, and bell pepper over the top. Season lightly with salt and pepper, and drizzle with a little olive oil.
