Vegan Arroz com Feijão

Arroz com Feijão is the heart and soul of Brazilian and Portuguese cuisine — a simple, nourishing staple eaten daily across the country. It is naturally rich in protein and fibre, wholesome, satisfying, and the perfect base for any meal — with absolutely no animal products needed.

🛒 Ingredients

  • 1 cup long‑grain white rice, rinsed well
  • 1 cup dried red kidney beans (or black beans), soaked overnight; or 2 cans (400g each), rinsed and drained
  • 1 small onion, finely diced.. 2 garlic cloves, minced
  • ½ red bell pepper, diced.. ½ yellow bell pepper, diced
  • 1 ripe tomato, chopped.. 2 tbsp olive oil
  • 2 tbsp olive oil,, 1 tsp ground cumin,, ½ tsp smoked paprika
  • Salt and black pepper to taste,, 2½ cups vegetable stock or water
  • Fresh parsley or coriander, chopped

    Cook the beans: If using dried soaked beans, simmer in salted water for 30–40 minutes until tender; drain. If using canned beans, rinse well and set aside.

    Sauté aromatics: Heat oil in a heavy pot over medium heat. Fry onion until soft, add garlic and peppers, cook for 3 minutes until fragrant. Stir in tomato, cumin, paprika, salt, and pepper.

    Toast rice: Add the rinsed rice and stir for 1–2 minutes until grains are coated and slightly translucent.

    Simmer: Pour in stock or water, then add the cooked beans. Bring to a boil, cover, reduce heat to low, and simmer gently for 18–20 minutes until all liquid is absorbed and rice is fluffy.

    Rest & serve: Turn off heat, leave covered for 5 minutes, then fluff gently with a fork. Scatter with fresh herbs and serve warm.
