Vegan Vatapá

Vatapá is one of Brazil’s most iconic dishes from Bahia — a rich, velvety, deeply savoury stew made with ground nuts, coconut milk, bread, and aromatic spices, traditionally served with acarajé or white rice. This fully vegan version keeps every bit of its signature thick, creamy texture and warm, complex flavour, replacing fish or shrimp with tender hearts of palm, mushrooms, or plant protein. It is fragrant, comforting, and full of Afro‑Brazilian culinary heritage — entirely free of animal products.

🛒 Ingredients

  • #Base & Paste;
  • 1 cup day‑old white bread crusts removed, soaked in water then squeezed dry
  • ½ cup raw unsalted peanuts,, ½ cup raw cashew nuts
  • ½ cup small shrimp‑style mushrooms or oyster mushrooms, finely chopped (or hearts of palm)
  • 1 small onion, roughly chopped.. 3 garlic cloves
  • 1 small piece fresh ginger (optional)
  • #Sauce & Seasoning;
  • 400ml full‑fat coconut milk,, 2 tbsp dendê oil (Brazilian palm oil)
  • 1 tsp ground coriander,, ½ tsp cumin,, ½ tsp turmeric
  • Salt and black pepper to taste.. 1–2 pimenta malagueta or small chilli peppers, chopped
  • Fresh coriander and parsley, chopped

    Make the nut & bread paste: Toast peanuts and cashews lightly in a dry pan until fragrant. Place nuts, squeezed bread, onion, garlic, ginger, and a splash of coconut milk into a blender. Blend until you have a thick, smooth paste.

    Sauté: Heat dendê oil in a heavy‑based pan over medium heat. Fry the paste gently for 5 minutes, stirring constantly so it does not stick or burn.

    Simmer: Slowly stir in the remaining coconut milk until smooth. Add spices, salt, pepper, and chilli. Bring to a gentle simmer and cook for 10–12 minutes until thickened and rich.

    Add texture: Stir in mushrooms or hearts of palm and cook for a further 5 minutes.

    Finish: Stir in most of the fresh herbs. Taste and adjust seasoning — it should be thick, creamy, and deeply savoury.

    Serve: Garnish with extra herbs and fresh chilli. Traditionally served with acarajé, white rice, or farofa.
