This fully vegan version keeps the traditional simple, fresh style, pairing sliced hearts of palm with ripe tomatoes, crisp greens, and a bright zesty dressing.   • #Salad Base;
  • 400g canned or jarred hearts of palm (palmito), drained well and sliced into rounds
  • 1 cup cherry tomatoes, halved
  • 2 handfuls fresh lettuce or mixed salad leaves
  • ÂĽ small red onion, thinly sliced (optional)
  • Fresh parsley, oregano, or basil leaves to garnish
  • #Simple Zesty Dressing;
  • 3 tbsp extra virgin olive oil,, 1 tbsp fresh lime juice or white wine vinegar
  • ½ tsp salt,, Freshly ground black pepper to taste
  • Optional: pinch of dried oregano or a dash of olive brine

    Prep the palmito: Drain hearts of palm thoroughly and pat lightly with kitchen paper to remove excess brine. Slice neatly into rounds or thick chunks.

    Arrange: Place fresh salad leaves on a platter or bowl. Arrange the sliced hearts of palm, cherry tomatoes, and red onion over the top.

    Make dressing: Whisk olive oil, lime juice, salt, pepper, and herbs until smooth and combined.
