Vegan Trifle

Trifle is the ultimate iconic British celebration dessert — famous for its beautiful layers of sponge cake, fruit, jelly, rich custard, and billowy cream. This fully vegan version captures every bit of that nostalgic, indulgent flavour and stunning appearance, replacing dairy, eggs, and gelatine with simple plant‑based alternatives. It is creamy, fruity, perfectly sweet, and just as impressive for Christmas, birthdays, or Sunday feasts as the traditional version — with absolutely no animal products at all.

  • #Sponge & Base;
  • 250g vegan sponge cake or vegan sponge fingers (store‑bought or homemade)
  • 3–4 tbsp sherry, fruit liqueur, or fruit juice (alcohol‑free option)
  • 300g fresh or frozen raspberries / mixed berries
  • 2 tbsp caster sugar (for macerating fruit)
  • #Vegan Jelly (Optional);
  • 1 sachet plant‑based gelatine substitute (agar‑agar or carrageenan)
  • 400ml berry juice or cranberry juice,, 2 tbsp caster sugar
  • #Vegan Vanilla Custard;
  • 3 cups unsweetened plant milk (oat or soy works best)
  • 3 tbsp cornflour,, 3–4 tbsp caster sugar,, 1½ tsp pure vanilla extract
  • 1 tbsp vegan butter (optional, for extra richness)
  • #Vegan Topping;
  • 1½ cups chilled coconut cream (thick part only, from a chilled can) OR vegan whipping cream
  • 1–2 tbsp icing sugar,, ½ tsp vanilla extract
  • Fresh raspberries, toasted flaked almonds, and fresh mint leaves to decorate

    Prep the fruit: Toss berries with sugar and leave for 15 minutes until juicy. Break or slice the sponge into chunks and arrange over the bottom of a large glass trifle bowl. Drizzle generously with your chosen liquid so the sponge soaks it up evenly.

    Add fruit & jelly (if using): Spoon the macerated berries and their juice over the sponge. If using jelly, prepare it following the packet instructions, pour gently over the fruit, and chill until fully set.

    Make the custard: Whisk cornflour with a splash of cold milk until smooth. Heat the rest of the milk and sugar until just steaming, pour into the cornflour mix while stirring constantly. Return to the pan and cook gently until thick and glossy. Stir in vanilla and butter (if using). Leave to cool completely, then pour evenly over the fruit/jelly layer. Chill until set.

    Whip the topping: If using coconut cream, whip it with icing sugar and vanilla until thick and fluffy. Spread or pipe it over the cold custard layer.

    Decorate & chill: Top with fresh raspberries, toasted almonds, and mint leaves. Chill for at least 4 hours before serving so all flavours meld together perfectly.
