Vegan Coronation Chickpea Sandwich
Coronation Chicken is an iconic British sandwich filling created to celebrate the Queenβs coronation, famous for its creamy, lightly spiced, fruity flavour. This vegan version swaps chicken for tender chickpeas, keeping all the beloved balance of mild curry warmth, sweet dried fruit, tangy mayonnaise, and crunch β without any animal products. It is creamy, satisfying, and instantly recognisable as the classic British deli staple, perfect for picnics, packed lunches, or afternoon tea.

π©βπ³ Instructions
- 1
Prep the chickpeas: Roughly mash about half the chickpeas with a fork, leaving the rest whole for texture β this gives the perfect chunky consistency.
- 2
Make the sauce: In a bowl, stir together vegan mayonnaise, curry powder, turmeric, mango chutney, lemon juice, salt, and pepper until smooth and well combined.
- 3
Combine: Add the mashed and whole chickpeas, chopped dried fruit, nuts (if using), and spring onion. Mix gently until everything is evenly coated in the sauce.
- 4
Chill (optional): Cover and refrigerate for 30 minutes to let the flavours blend beautifully.
- 5
Assemble: Spread a little extra vegan mayonnaise on the bread if you like. Spoon the chickpea filling generously over one slice, top with crisp lettuce, then close the sandwich.
- 6
Serve: Slice in half and enjoy β just like the classic British deli favourite!
