  • 3 very ripe bananas (brown‑speckled skins), mashed well
  • ½ cup light brown sugar or coconut sugar
  • â…“ cup neutral oil (coconut oil melted, or canola/vegetable oil)
  • ÂĽ cup unsweetened plant milk (oat, almond, or soy)
  • 1 tsp apple cider vinegar,, 1 tsp pure vanilla extract ,, 1½ cups all‑purpose flour
  • 1 tsp baking soda,, ½ tsp ground cinnamon,, ½ tsp fine salt,, ½ tsp baking powder
  • Optional: ÂĽ cup chopped walnuts, pecans, or vegan chocolate chips

    Preheat your oven to 175°C / 350°F. Grease a standard loaf pan or line it with parchment paper.

    In a medium bowl, stir together the mashed bananas, sugar, oil, plant milk, vinegar, and vanilla until smooth and well combined.

    In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.

    Add the dry ingredients to the wet mixture and stir gently just until no dry flour remains — do not overmix, or the bread will turn dense. Fold in nuts or chocolate chips if using.

    Pour the batter evenly into the prepared pan. Bake for 50–60 minutes, or until a toothpick inserted into the centre comes out clean or with just a few moist crumbs.
