Vegan Maple Berry Overnight Oats

Maple Berry Overnight Oats is one of the most loved grab‑and‑go breakfasts across the USA, made by soaking rolled oats until they turn soft, creamy, and rich with flavour. It combines the natural sweetness of maple syrup with juicy mixed berries and nutty oats, creating a wholesome, satisfying meal ready to eat straight from the fridge. This vegan version uses only plant‑based milk and ingredients — no dairy, honey, or animal products — keeping all the classic comforting taste while being easy to prepare ahead and perfect for busy mornings.

đź›’ Ingredients

  • 1 cup old‑fashioned rolled oats
  • 1½ cups unsweetened almond, oat, or soy milk
  • 2 tbsp pure maple syrup,, 1 tbsp chia seeds (helps create a creamy texture)
  • ½ tsp vanilla extract,, Pinch of salt
  • 1 cup mixed fresh or frozen berries (blueberries, raspberries, blackberries)
  • Optional: Chopped pecans or walnuts, extra maple syrup, coconut yoghurt for topping

👩‍🍳 Instructions

  1. 1

In a bowl or jar, stir together the rolled oats, chia seeds, salt, maple syrup, vanilla, and plant milk until well combined.

  2. 2

Fold in half of the mixed berries, then cover and place in the fridge for at least 6 hours or overnight — the oats will absorb the liquid and become soft and creamy.

  3. 3

When ready to serve, give the mixture a gentle stir. Add a little more milk if you prefer a looser consistency.

  4. 4

Top generously with the remaining fresh berries, nuts, a drizzle of extra maple syrup, or a spoonful of coconut yoghurt. Enjoy cold straight from the jar or bowl.
