
Vegan Syrniki
Syrniki is a beloved breakfast and sweet treat in Ukraine, traditionally made with fresh curd cheese. This vegan version uses silken tofu or coconut yoghurt to recreate that same soft, fluffy texture and gentle sweetness, with a golden, lightly crisped outside and tender centre. It tastes just as comforting and delicious as the original, perfect served with cream, jam, or fresh fruit.

- 300g silken tofu (well drained) or thick unsweetened coconut yoghurt
- 80–100g plain flour
- 2–3 tbsp sugar or maple syrup
- 1 tsp vanilla extract,, ½ tsp baking powder,, Pinch of salt
- 2–3 tbsp neutral oil for frying
- Optional: 1 tbsp raisins or lemon zest
- To serve: Icing sugar, vegan sour cream, fruit jam, or fresh berries

Press the tofu gently to remove excess liquid, then mash it in a bowl until smooth and creamy. Add sugar, vanilla, and salt, mixing well.

Sift in the flour and baking powder, stirring gently until you get a thick, soft batter — do not over‑mix; it should hold its shape when spooned. Fold in raisins or zest if using.

Heat a little oil in a non‑stick pan over medium‑low heat. Drop spoonfuls of batter into the pan, leaving space between each one.

Cook for 2–3 minutes on each side until deep golden brown and firm to the touch. Lower the heat if they brown too quickly so the inside cooks through.

Serve warm, dusted with icing sugar and topped with vegan cream, jam, or fresh strawberries.
