- 3 medium potatoes, peeled and diced small
- 2 medium carrots, peeled and diced small
- 1 cup green peas (fresh or canned, drained)
- 3β4 medium pickled cucumbers, diced small
- 1 small crisp apple, peeled and diced (optional, adds nice sweetness)
- Β½ cup finely diced onion or spring onion
- 150β180g good quality vegan mayonnaise
- Salt and black pepper to taste
- Fresh dill or parsley for garnish

Boil the diced potatoes and carrots in lightly salted water until just tender β do not overcook so they keep their shape and texture. Drain well and leave to cool completely.

In a large bowl, combine the cooled potatoes, carrots, green peas, pickled cucumbers, apple, and onion.

Add the vegan mayonnaise and mix gently until everything is evenly coated. Season carefully with salt and plenty of black pepper β taste and adjust as needed.

Cover the bowl and chill in the fridge for at least 1 hour before serving; this allows the flavours to blend together beautifully.

Serve cold, garnished with fresh dill or parsley and extra black pepper if you like.
