Baleadas is the most iconic and beloved street food and home‑cooked meal of Honduras: soft, warm handmade flour tortillas folded over a rich layer of refried black beans, then piled high with fresh toppings. This vegan version keeps all the comforting, hearty flavour and satisfying texture of the original — replacing dairy cheese and sour cream with delicious plant‑based alternatives — so it tastes just as authentic and delicious as the ones sold at roadside stalls or made in family kitchens across the country.

- #Homemade Flour Tortillas;
- 250g plain flour,, ½ tsp salt
- 1 tbsp neutral oil,, 120–140ml warm water
- #Refried Black Beans;
- 250g cooked black beans
- 1 small onion, finely diced
- 1 garlic clove, minced
- ½ tsp ground cumin,, 1 tbsp oil
- Salt and pepper to taste
- #Classic Toppings;
- 1 ripe avocado, sliced
- Vegan crumbled cheese or grated cheddar
- Vegan sour cream or coconut yoghurt
- Pickled red onion (optional)
- Hot sauce or lime wedges (to serve)

Make the tortillas: Mix flour and salt in a bowl, add oil, then gradually stir in warm water until a soft dough forms. Knead for 3–4 minutes until smooth, then cover and rest for 10 minutes. Divide into equal portions, roll each into a thin round, and cook on a dry hot pan for about 1 minute per side until puffed and lightly browned. Keep wrapped to stay soft.

Make the beans: Heat oil in a pan, sauté onion and garlic until soft. Add cumin, then the cooked beans, and mash roughly with a fork or potato masher while stirring over low heat until thick and creamy. Season well with salt and pepper.

Assemble: Take a warm tortilla, spread a generous layer of refried beans all over the surface. Top with avocado slices, vegan cheese, vegan sour cream, and pickled onion if using.

Serve: Fold the tortilla in half like a taco, and enjoy warm with a squeeze of lime or a dash of hot sauce.
