
Vegan Casamiento
Casamiento, which translates to “marriage”, is a beloved staple dish in Honduras where fluffy rice and tender black beans are cooked together with aromatic herbs and spices until they blend perfectly in flavour and texture. It is the perfect side dish or simple main meal, present at almost every table across the country. This vegan version keeps the authentic savoury taste, rich colour, and comforting heartiness of the traditional recipe, using only plant‑based ingredients with no animal products at all.

- 200g long‑grain white rice
- 150g cooked black beans (or 1 can, drained and rinsed)
- 1 small onion, finely diced
- 1 garlic clove, minced
- ½ red bell pepper, diced
- ½ tsp ground cumin,, ½ tsp dried oregano,, 400ml vegetable stock or water
- 2 tbsp neutral cooking oil,, Salt and black pepper to taste
- Fresh coriander and lime wedges to serve

Rinse the rice thoroughly until the water runs clear. Set aside to drain well.

Heat oil in a pan or pot over medium heat. Sauté the onion, garlic, and bell pepper until soft and fragrant.

Add the cumin and oregano, stir for a moment, then add the drained rice and toss well to coat it in the oil and spices.

Pour in the stock or water, then add the cooked black beans. Bring to a boil, then lower the heat to the lowest setting, cover tightly, and simmer for 20–25 minutes until all liquid is absorbed and the rice is fluffy.

Remove from heat and let it rest covered for 5 minutes. Fluff gently with a fork, season to taste, and serve warm topped with fresh coriander and a squeeze of lime.
