- Pinch of fine salt
- 140g cold hard vegan butter, cubed
- 1 tsp vanilla extract
- Optional: 1 tsp lemon zest for extra brightness

Prep: Line a baking tray with parchment paper.

Mix dry: Sift flour, sugar, and salt into a large bowl.

Rub in butter: Add cold vegan butter and rub it gently into the flour using your fingertips until the mixture looks like fine, sandy crumbs. Do not over‑work — keep everything cold.

Form dough: Add vanilla (and lemon zest if using). Press the mixture together with your hands until it forms a smooth, firm dough — do not add liquid.
