Dubu Jorim is a beloved Korean home‑style dish where firm tofu is simmered slowly in a rich, sweet‑spicy soy glaze until every piece absorbs deep savoury flavour and develops a glossy finish. This fully vegan version keeps all the authentic balance of heat, sweetness, and umami — no meat, fish sauce, or dairy used at all. - #400g extra‑firm tofu, pressed well and cut into thick rectangular slices
- 2 tbsp neutral cooking oil
- 3 garlic cloves, finely minced
- 1 small shallot or ÂĽ onion, finely diced
- 1 spring onion, thinly sliced (green parts reserved for garnish)
- 1 tsp sesame seeds for garnish

- 3 tbsp low‑sodium soy sauce or tamari
- 2 tbsp brown rice syrup, maple syrup, or coconut sugar
- 1 tbsp gochugaru (Korean chilli flakes) – adjust for preferred heat
- 1 tsp gochujang (Korean chilli paste)
- ½ tsp grated fresh ginger
- ½ cup (120ml) water or vegetable stock
- 1 tsp toasted sesame oil

Pan‑fry the tofu: Heat oil in a non‑stick pan over medium heat. Add tofu slices in a single layer and fry for 2–3 minutes on each side until lightly golden and firm around the edges. Remove and set aside.

Sauté aromatics: In the same pan, lower heat slightly, add garlic, onion, and the white parts of the spring onion. Cook for 30 seconds until fragrant — do not brown.

Make the sauce: Stir in soy sauce, sweetener, gochugaru, gochujang, ginger, and water. Mix well and bring to a gentle simmer.

Braise: Return the tofu to the pan, spoon sauce over every piece. Simmer gently for 8–10 minutes, turning the tofu carefully halfway through, until the sauce thickens, turns glossy, and coats the tofu evenly.

Finish: Drizzle with toasted sesame oil, toss lightly once more. Sprinkle with spring onion greens and sesame seeds. Serve warm with steamed rice.
