Prebranac is one of Serbia’s most beloved staple dishes, a simple yet deeply flavourful home‑cooked classic that appears at family tables, holidays, and traditional gatherings everywhere. It consists of tender white beans slowly baked until they absorb every bit of rich, savoury flavour from caramelised onions, sweet paprika, garlic, and tomato. This fully vegan version keeps all the authentic warmth and comforting character of the original — no meat, animal fat, or dairy used at all. The beans turn creamy inside while holding their shape, coated in a thick, aromatic sauce that is rich, hearty, and perfectly balanced. It tastes even better when reheated the next day, making it ideal for preparing ahead and sharing with loved ones.

- 3 cups dried white beans (navy, cannellini, or butter beans), rinsed well
- 3 large yellow onions, thinly sliced
- 3–4 garlic cloves, minced
- ÂĽ cup neutral oil (sunflower, canola, or olive oil)
- 2 tbsp sweet Hungarian paprika
- 1 tsp smoked paprika (optional, for deeper flavour)
- 2 tbsp tomato paste
- 1 tsp salt (adjust to taste)
- ½ tsp freshly ground black pepper
- 1 dried bay leaf
- 2–3 cups water or vegetable stock
- 1 tsp sugar (optional, to balance acidity)

Soak and prep the beans: Place the rinsed beans in a large bowl, cover completely with cold water, and leave to soak for at least 8 hours or overnight. Drain and rinse well, then transfer to a pot, cover with fresh water, and bring to a boil. Simmer for 30–40 minutes until slightly softened but still firm — do not overcook. Drain thoroughly and set aside.

Caramelise the onions: Preheat your oven to 180°C / 350°F. Heat the oil in a large oven‑safe pot or Dutch oven over medium‑low heat. Add the sliced onions and cook slowly for 15–20 minutes, stirring often, until they turn soft, golden, and deeply caramelised — this step builds the signature rich flavour. Stir in the minced garlic and cook for another minute until fragrant.

Build the flavour base: Add the sweet paprika, smoked paprika, and tomato paste; stir well and cook for 1 minute to release their aroma. Add the pre‑cooked beans, bay leaf, salt, pepper, and sugar if using. Pour in enough water or stock to just cover the beans, then stir gently to combine everything evenly.

Slow bake: Cover the pot tightly with a lid or foil. Bake for 1 hour, then remove the lid, give it a gentle stir, and bake uncovered for another 30–45 minutes. The sauce will thicken, turn rich and deep red, and coat the beans beautifully while keeping them tender and intact.

Finish and serve: Remove the bay leaf. Taste and add a little more salt or pepper if needed. Let it rest for 10 minutes before serving — this allows all the flavours to settle and blend perfectly. Enjoy warm with crusty bread, pickles, or fresh salad.
