Vegan Mămăligă

Mămăligă is the national staple food of Moldova — a simple, hearty cornmeal porridge with a rich history, often called “the peasant bread”. This fully vegan version follows the authentic traditional method: creamy, firm yet tender, golden, and naturally free of dairy, butter, or animal products. It can be served soft and creamy, or cooled and sliced, and pairs perfectly with stews, grilled vegetables, pickles, or vegan cheese.

🛒 Ingredients

  • 1 cup coarse yellow cornmeal (polenta meal)
  • 3 cups cold water (or vegetable stock for extra flavor)
  • 1 tsp fine salt
  • 1 tbsp neutral oil or coconut oil
  • Optional: ¼ tsp turmeric for richer golden color
  • Fresh parsley or dill for garnish

    Combine ingredients: In a thick‑bottomed pot, mix cold water, salt, oil, and cornmeal thoroughly while cold — this prevents lumps from forming.

    Bring to heat: Place over medium heat, stirring constantly until the mixture starts to bubble and thicken.

    Simmer slowly: Turn heat down to the lowest setting. Continue cooking and stirring frequently for 25–30 minutes. The mămăligă will become very thick, pull away from the sides of the pot, and the grains will be fully soft and creamy.

    Shape & rest: Pour or scoop the cooked mămăligă onto a wooden board, platter, or greased bowl. Smooth the top and let it rest for 5–10 minutes — it will firm up enough to slice easily.

    Serve: Garnish generously with fresh herbs. Serve hot and soft, or slice into wedges once set. Enjoy with Ghiveci, Sarmale, grilled vegetables, pickled peppers, or vegan cheese.
