🛒 Ingredients

  • #For the Translucent Wrapper:
  • ½ cup wheat starch
  • ¼ cup tapioca starch
  • ½ cup boiling water
  • ½ tsp neutral oil
  • Pinch of fine salt
  • #For the Savory Filling:
  • 80g fresh shiitake mushrooms, finely chopped
  • 80g king oyster mushrooms, minced
  • ¼ cup bamboo shoots, finely diced
  • ¼ cup carrot, finely minced
  • 2 tbsp corn kernels (fresh or canned)
  • 1 tbsp finely chopped spring onion
  • 1 tsp grated fresh ginger
  • 1 tbsp light soy sauce
  • ½ tsp sesame oil
  • Pinch of white pepper
  • ½ tsp sugar (optional, to balance flavor)
  • 1 tsp cornstarch (to bind the filling)
  • #For Serving:
  • Dipping sauce: 2 tbsp light soy sauce + 1 tsp rice vinegar + pinch of chili flakes
  • Sliced spring onion or coriander for garnish

    Make the wrapper dough: Combine wheat starch, tapioca starch, and salt in a heat‑proof bowl. Pour in boiling water and oil all at once, stirring quickly with a spoon until a shaggy dough forms. Let cool slightly, then knead gently for 1–2 minutes until smooth and elastic. Cover with a damp cloth and rest for 10 minutes.

    Prepare the filling: Mix all filling ingredients in a bowl, stirring well until combined. The cornstarch helps hold the mixture together.

    Shape the dumplings: Roll the dough into a long log, then cut into 12–15 equal pieces. Press each piece flat, then roll out very thinly into a round wrapper (about 7–8 cm wide). Place 1 teaspoon of filling in the center of each wrapper.

    Fold & pleat: Fold the wrapper in half over the filling, then pinch and pleat the edges tightly to seal completely — do not leave gaps, or they will open while steaming.

    Steam: Arrange dumplings on parchment paper or cabbage leaves in a steamer basket, leaving space between them. Steam over high heat for 7–8 minutes until the wrappers turn completely translucent and glossy.
