🛒 Ingredients

  • #For the Vegan Æblekage:
  • 3–4 medium apples (such as Granny Smith or Elstar), cored and thinly sliced
  • 200g all‑purpose flour
  • 120g coconut sugar or brown sugar
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Pinch of salt
  • 240ml unsweetened plant‑based milk (oat, almond, or soy)
  • 60ml neutral oil (coconut oil, sunflower oil)
  • 1 tbsp apple cider vinegar
  • 1 tsp pure vanilla extract
  • 2 tbsp extra sugar for sprinkling over apples (optional)
  • Icing sugar for dusting before serving
  • #For Serving (Optional):
  • Vegan vanilla ice cream or whipped coconut cream

👩‍🍳 Instructions

  1. 1

Preheat your oven to 180°C (350°F) and line a round 20–22cm cake pan with parchment paper.

  2. 2

In a large bowl, whisk together the flour, coconut sugar, baking powder, cinnamon, nutmeg, and salt until evenly combined.

  3. 3

In a separate bowl, mix the plant‑based milk, oil, apple cider vinegar, and vanilla extract. Let it sit for 1 minute until slightly frothy.

  4. 4

Pour the wet mixture into the dry ingredients and stir gently just until combined — do not overmix, a few small lumps are fine.

  5. 5

Pour the batter evenly into the prepared pan. Arrange the apple slices decoratively over the top, slightly pressing them into the batter. Sprinkle with a little extra sugar if you like.

  6. 6

Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.

  7. 7

Let the cake cool completely in the pan, then carefully remove it. Dust generously with icing sugar, slice, and serve warm or at room temperature with vegan ice cream or cream if desired.
