  • 1/2 tsp baking powder
  • Pinch of salt
  • 240ml plant-based milk (e.g., soy or oat milk)
  • 1 tbsp apple cider vinegar (to make plant-based "buttermilk")
  • 1 tbsp flax meal + 3 tbsp water (replacing 1 egg)
  • 1 tsp vanilla extract
  • 1-2 tbsp vegan margarine, for cooking
  • 2 tbsp raisins (optional)
  • Powdered sugar, for dusting

  • Applesauce (Apfelmus) or your favorite fruit jam (e.g., berry or plum jam)

    Prepare Flax Egg & "Buttermilk": In a small bowl, combine flax meal with 3 tbsp of water, stir well, and let sit for 5-10 minutes until it thickens like an egg. In a separate bowl, mix plant-based milk with apple cider vinegar, stir, and let sit for 5 minutes until slightly curdled (this is your plant-based "buttermilk").

    Combine Dry Ingredients: In a large mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, and salt.

    Mix Wet & Dry Ingredients: Add the thickened flax egg mixture, plant-based "buttermilk" mixture, and vanilla extract to the dry ingredients. Gently whisk until just combined and there are no large lumps. Be careful not to overmix. If using raisins, stir them in now.

    Cook the Kaiserschmarrn: Heat 1 tbsp of vegan margarine in a medium-sized non-stick pan (approx. 20-24 cm / 8-9 inches) over medium heat. Pour half of the pancake batter into the pan, spreading it evenly. Cook for about 3-5 minutes until the bottom is golden brown and bubbles start to appear on top.

    Flip & Shred: Carefully flip the pancake. Cook the other side for another 2-3 minutes. Once both sides are cooked, use two spatulas or forks to tear the pancake into small, bite-sized pieces. Continue cooking, stirring occasionally, until all pieces are golden brown and slightly crispy on the edges.

    Finish & Serve: Remove the cooked Kaiserschmarrn from the pan. Repeat the process with the remaining batter. Serve the warm Kaiserschmarrn on plates, generously dusted with powdered sugar, and accompanied by applesauce or your favorite jam on the side.
