🛒 Ingredients

  • #the main ingredient:
  • 250 grams of firm white tofu, diced
  • One carrot, cut obliquely
  • One head of cauliflower/broccoli, cut into small florets
  • One red/green bell pepper, diced
  • 100 grams of green beans, cut into short pieces
  • #stock ingredients and spices:
  • 3 tablespoons of pure peanut butter without sugar/added milk
  • 2 tablespoons Thai red curry paste (make sure it's vegetarian)
  • 400 ml thick vegetable coconut milk
  • 2 tablespoons vegetable soy sauce
  • One tablespoon of coconut sugar/palm sugar
  • One tablespoon of lime juice
  • 2 cloves garlic, finely chopped
  • One piece of ginger, finely grated
  • 2 tablespoons vegetable oil
  • A little vegetable stock if the sauce is too thick.
  • Fresh basil leaves for sprinkling

    Heat oil in a pan, sauté garlic and ginger until fragrant. Add the red curry paste and stir quickly to release the aroma of the spices.

    Add peanut butter, stir well, then pour in coconut milk slowly while continuing to stir so it doesn't clump. Add soy sauce and coconut sugar, cook until it boils slowly.

    Add the carrots first, cook for 3 to 4 minutes, then add the cauliflower, bell peppers, green beans, and tofu. Stir gently and cook until the vegetables are cooked through but still crisp and bright in color.

    Taste and adjust the seasoning if needed. Finally, add the lime juice to bring out the refreshing flavor, then turn off the heat.
