🛒 Ingredients

  • 250 grams of penne pasta
  • 400 grams of finely peeled ripe tomatoes/canned chopped tomatoes
  • 3 cloves of garlic, thinly sliced/chopped
  • 1 to 2 dried red chilies/chili powder to taste (according to your taste)
  • 3 to 4 tablespoons of extra virgin olive oil
  • Salt to taste
  • Chopped fresh parsley for sprinkling
  • Vegetable grated cheese (optional)

    Boil plenty of water with a pinch of salt, add the penne, and cook according to package directions until al dente (tender and perfectly cooked). Drain, reserving a little of the cooking water.

    While the pasta is boiling, heat the olive oil in a pan, sauté the garlic and chilies over low heat until fragrant and golden brown, do not let them burn.

    Add the tomatoes, add a pinch of salt, and cook over medium heat for 10 to 12 minutes until the sauce thickens and is perfectly combined. Press the tomatoes lightly to crush them evenly.

    Add the drained Penne to the pan with the sauce, stir quickly and evenly for a moment so that the seasoning coats the pasta perfectly. Add a little pasta cooking water if the sauce is too thick.
