🛒 Ingredients
- 300 grams of firm white tofu, squeeze out a little of the water then mash roughly
- One small onion, finely chopped
- Two cloves of garlic, finely chopped
- 1/2 bell pepper, diced
- One small tomato, roughly chopped
- One teaspoon of turmeric powder (for color and aroma)
- 1/2 teaspoon cumin powder, 1/2 teaspoon black pepper
- One tablespoon of vegetable soy sauce
- Salt to taste
- Vegetable oil to taste
- Fresh chives or parsley for sprinkling

Heat a little oil in a frying pan, sauté the onions until they are soft, then add the garlic and sauté briefly until fragrant.

Add the bell peppers and tomatoes and cook briefly until slightly wilted. Add the turmeric, cumin, and pepper and stir well for a few minutes to release their aroma.

Add the crumbled tofu and stir gently until evenly coated with the spices. Add the soy sauce and salt to taste.

Cook over medium heat while stirring occasionally for 5 to 7 minutes until the spices are completely absorbed and the water from the tofu has reduced.
