🛒 Ingredients

  • 3 cups long grain/basmati rice, washed and soaked for 30 minutes
  • 3 large carrots, peeled and sliced lengthwise into matchstick-sized pieces.
  • Two large onions, sliced into circles or lengthwise
  • 100 grams of chickpeas/raisins (optional)
  • One teaspoon cumin seeds, 1/2 teaspoon turmeric powder, a pinch of black pepper
  • Salt to taste
  • 3 to 4 tablespoons vegetable oil
  • 4 to 4.5 cups warm water or vegetable broth

    Heat the oil in a large, thick-bottomed saucepan. Add the onion, sauté slowly until it is a beautiful golden color.

    Add the carrots, stir well and cook briefly until the carrots are slightly wilted but still crispy. Add cumin seeds, turmeric and salt, stir quickly for a while to release the aroma of the spices.

    Add the rice that has been drained of its soaking water, stir gently for 2 to 3 minutes until the rice grains are evenly coated with oil and spices. Add chickpeas or raisins if desired.

    Slowly pour in the water or vegetable stock, without stirring. Let it simmer over high heat until the water reduces slightly above the surface of the rice.

    Reduce the heat to as low as possible, cover the pan tightly (you can line the lid with a clean cloth to prevent steam from escaping), cook for 30 to 35 minutes until the water is gone and the rice is perfectly cooked.

    Turn off the heat, let it sit for 10 to 15 minutes before stirring gently.Serve warm to savor the authentic flavor of plov at its finest. Your special dish is ready to be enjoyed!
