🛒 Ingredients

  • #skin ingredients;
  • 250 grams of all-purpose flour
  • 1/2 teaspoon salt
  • 50 grams of vegetable margarine/vegetable butter, melted
  • 100 to 120 ml of warm water as needed
  • #filling ingredients;
  • One carrot, cut into very small cubes
  • Two medium-sized potatoes, boiled until half cooked and then cut into small cubes.
  • One onion, finely chopped
  • Two cloves of garlic, finely chopped
  • 100 grams of fresh/frozen sweet corn
  • 100 grams of finely chopped spinach/squeezed water
  • 1/2 teaspoon cumin powder, salt, black pepper to taste
  • Vegetable oil to taste

    Make the crust: mix the flour and salt, pour in the melted margarine then stir slowly while pouring in the warm water little by little. Knead briefly until the dough comes together and is smooth, let it rest for 15 to 20 minutes.

    Make the filling; Heat oil, saute onion and garlic until fragrant. Add the carrots and cook briefly, then add the potatoes, corn, and spices. Finally, add the spinach, stir well, and cook briefly. Remove from heat and let cool.

    Form empanadas; divide the dough into equal parts, roll out thinly to form circles. Place the filling in the center, fold it into a semicircle, press the edges tightly and pinch with your fingers or a fork to prevent leakage.

    Bake: Arrange on a baking sheet, brush with a little water. Bake in a preheated oven at 180°C for 25 to 30 minutes, until golden brown.
