🛒 Ingredients

  • Soak 250 grams of large white beans overnight then boil until half soft.
  • 400 grams of yellow pumpkin, peeled, cut into large cubes
  • One onion, finely chopped
  • 2 cloves garlic, finely chopped
  • One ripe tomato, roughly chopped
  • One teaspoon of cumin powder
  • 1/2 teaspoon turmeric powder
  • Salt and black pepper to taste
  • Vegetable oil to taste
  • Water or vegetable stock as needed
  • Fresh basil leaves for sprinkling
