🛒 Ingredients

  • One carrot, cut into fairly large cubes
  • One potato, diced
  • 100 grams of cauliflower, cut into florets
  • 100 grams of green beans, cut into short pieces
  • One red/green bell pepper, diced
  • 100 grams of fresh/frozen peas
  • Two finely chopped onions
  • 3 cloves garlic, finely chopped
  • One piece of ginger, finely grated
  • Two ripe tomatoes, roughly chopped
  • 150 to 200 ml thick vegetable coconut milk
  • One teaspoon turmeric powder, 1 teaspoon coriander powder, 1/2 teaspoon cumin powder
  • 1/2 teaspoon chili powder (to taste)
  • Salt, a little sugar, and vegetable oil to taste
  • Fresh coriander leaves for sprinkling

    Heat oil in a frying pan, saute the onions slowly until soft and golden. Add garlic and ginger and continue to sauté until fragrant.

    Add all the powdered spices, stir quickly for a moment so it doesn't burn, then add the tomato pieces. Cook until the tomatoes break down and blend with the spices.

    Add the vegetables that take the longest to cook first (potatoes and carrots), stir well and cook briefly. Add the remaining vegetables, stir gently to coat evenly with the spices.

    Pour a little water as needed, cook over medium heat until the vegetables are tender but still crunchy. Slowly add the thick coconut milk while stirring, add salt and a little sugar to balance the taste.
