🛒 Ingredients
- 150 grams of Cannellini beans/white beans, soaked overnight then boiled until soft
- 200 grams of old/dry whole wheat bread, cut into small cubes
- One bunch of black kale/sabu cabbage, remove the hard bones then roughly chop
- Two carrots, cut into small cubes
- Two stalks of celery, roughly chopped
- One onion, finely chopped
- 2 cloves garlic, finely chopped
- Three ripe tomatoes, roughly chopped or 200 grams of tomato sauce
- One sprig of fresh Thyme and Rosemary leaves
- 1 liter of warm vegetable stock
- Extra virgin olive oil to taste
- Salt and black pepper to taste

Heat olive oil in a large saucepan, sauté the onion and garlic over low heat until fragrant and wilt gently so they don't burn.

Add the carrots and celery, cook briefly, then add the tomatoes and fresh herbs. Stir well and cook until the tomatoes start to break down and release their juices.

Add half of the boiled white beans, stir gently. Pour in the vegetable stock, bring to a boil then reduce the heat and simmer for 30 minutes until all the vegetables are tender and the flavors have blended.

Add the greens and remaining white beans and cook for another 10 to 15 minutes. Add the old bread pieces and stir gently until the bread softens and thickens the sauce naturally.

Add salt and pepper to taste. Turn off the heat and let it sit for a while to let the flavors soak in. Serve warm with a drizzle of fresh olive oil on top. Enjoy while it's still warm to experience its true warmth. Your special dish is ready to be enjoyed!
