🛒 Ingredients

  • Two onions, roughly chopped
  • Two large carrots, cut into rounds
  • Two stalks of celery, roughly chopped
  • 150 grams of button mushrooms/oyster mushrooms, cut into large pieces
  • 100 grams of soft boiled red beans/lentils
  • 2 cloves garlic, finely chopped
  • One tablespoon of wheat flour/cornstarch
  • 400 to 500 ml warm vegetable stock
  • One tablespoon of tomato sauce/tomato paste
  • 1/2 teaspoon black pepper powder, a pinch of dried thyme, and salt to taste
  • Vegetable oil to taste
  • #top layer ingredients:
  • 4 to 5 medium-sized potatoes, peeled and sliced thinly into circles
  • A little vegetable oil and salt for sprinkling

    Heat a little oil in a heatproof skillet or ovenproof pot. Sauté the onion and garlic until fragrant and wilted.

    Combine carrots, celery, and mushrooms and cook briefly until slightly wilted. Sprinkle with flour, stir well, and cook for 1 to 2 minutes to prevent the mixture from tasting raw.

    Slowly pour in the vegetable stock while stirring, then add the tomato sauce, spices, salt, and the boiled peanuts. Bring to a boil, then turn off the heat.

    Arrange the potato slices neatly in a circle, covering the entire surface of the vegetable mixture. Brush with a little oil and sprinkle with a pinch of salt for a crispy crust.

    Cover the container with a lid or aluminum foil, bake in an oven at 180°C for 40 minutes. Remove the lid, bake for another 20 to 25 minutes until the potatoes are cooked through and have a crispy brown color.
