🛒 Ingredients

- 200 grams of dried dates, pitted and roughly chopped
- 200 ml hot water
- One teaspoon of baking soda
- 150 grams of all-purpose flour
- 100 grams of coconut sugar/fine granulated sugar
- One teaspoon of baking powder
- 1/2 teaspoon cinnamon powder (optional)
- A pinch of salt
- 80 ml unsalted vegetable oil
- One teaspoon of vanilla extract
- #caramel sauce ingredients:
- 150 grams of coconut sugar/liquid brown sugar
- 100 ml thick coconut milk/vegetable cream
- 50 grams of vegetable butter
- A pinch of fine salt
- Vegetable ice cream or vegetable whipped cream to taste (as a topping)

Put the dates and baking soda into hot water, let it soak for 10 to 15 minutes until the dates are soft.

Preheat oven to 170°C, grease a heatproof bowl with a little oil. Combine all dry ingredients in a large bowl and stir well.

Add the oil, vanilla, and the date mixture and its soaking water. Stir gently until combined, but don't overmix to keep the cake soft.

Pour the batter into the container, bake for 35 minutes until the surface is brown and a toothpick inserted comes out clean.

While waiting for the pudding to cook, make the caramel sauce; cook all the sauce ingredients over low heat, stirring constantly, until it boils and thickens to a glossy consistency.
