🛒 Ingredients

  • 4 sheets of wheat or corn tortilla skins (skin ingredients)
  • #Main ingredients:
  • 150 grams of white/brown rice, cooked thoroughly
  • 100 grams of soft boiled red beans/black beans
  • One sweet corn kernel, boil briefly
  • One onion, finely chopped
  • 2 cloves garlic, finely chopped
  • One red/green bell pepper, diced
  • One stalk of spring onion, finely sliced
  • #seasonings and complementary ingredients:
  • 2 teaspoons cumin powder, 1 teaspoon chili powder, 1/2 teaspoon coriander powder
  • Salt, black pepper and a little lime juice to taste
  • Vegetable oil to taste
  • Vegetable salsa or chili sauce, avocado slices, fresh lettuce (to taste)

    Heat a little oil in a frying pan, sauté the onions and garlic until fragrant and wilted.

    Add the paprika, cook for a while, then add all the powdered spices, stir well so that the aroma of the spices comes out perfectly.

    Add the beans, corn, and cooked rice. Stir gently until everything is evenly mixed and the seasonings are absorbed. Add the tomatoes and spring onions, add salt, pepper and lime juice, stir briefly then turn off the heat.

    Heat each tortilla sheet briefly on a flat pan to make it more flexible and warm.

    Place the filling in the center of the tortilla, add toppings like avocado or sauce if you like. Fold the left and right sides inwards, then roll it neatly from the bottom to the top until it is completely closed.
