🛒 Ingredients

  • # skin Tart ingredients;
  • 180 grams of wheat flour
  • 60 grams of powdered sugar
  • A pinch of salt
  • 100 grams cold vegetable butter, cut into small pieces
  • 2 to 3 tablespoons of cold water as needed
  • #lemon filling ingredients;
  • 200 ml thick vegetable milk/thin coconut milk
  • 120 grams of granulated sugar
  • 3 tablespoons cornstarch
  • Grated zest and juice of 2 fresh lemons
  • 2 tablespoons vegetable oil or vegetable butter
  • A pinch of salt
  • Thin lemon slices, fresh berries, a little powdered sugar (for garnish)

    Prepare the tart crust; mix the flour, sugar, and salt. Add the vegetable shortening and rub gently until it forms a coarse powder. Gradually add the cold water until the dough comes together. Flatten into a tart pan, prick the base with a fork, let cool for 15 minutes, then bake at 180°C for 15 to 20 minutes until golden brown. Remove and let cool.

    Make the filling: Dissolve the cornstarch in a little vegetable milk. Stir in the remaining milk, sugar, and salt. Add the cornstarch solution, stirring constantly until it thickens and boils. Turn off the heat, add the grated peel, lemon juice, and vegetable butter, and stir until smooth.

    Pour the hot filling into the cooled tart shell and smooth it out evenly. Let it cool to room temperature, then refrigerate for at least 2 hours until it sets completely.
