Vegan Apple Cake

Vegan Apple Cake It is a warm and mouth-watering dessert, made completely without eggs, dairy, or other fancy products or 100% plant-based! Beautifully arranged apple slices in a circle on top of the soft cake batter, combined with the aroma of cinnamon and the natural sweetness of perfectly ripe apples. The texture is soft and juicy, the appearance is elegant and the taste is balanced between sweet, slightly fresh sour, and warm spices. It is perfect to be served as an accompaniment to tea or coffee, a family dessert, a treat for guests, or a sweet snack that is perfect for anyone to enjoy.

🛒 Ingredients

  • #dough ingredients:
  • 200 grams of all-purpose flour
  • 100 grams of coconut sugar/granulated sugar
  • One teaspoon of baking powder
  • 1/2 teaspoon baking soda
  • One teaspoon of cinnamon powder
  • A pinch of salt
  • 120ml vegetable oil
  • 150 ml plant milk (soy milk/oat milk)
  • One tablespoon of lime juice
  • One teaspoon of vanilla extract
  • #filling and decoration ingredients;
  • 3 to 4 medium-sized apples, Peel and slice thinly in circles
  • A little sugar and cinnamon for sprinkling
  • A little maple syrup/vegetable honey (optional)

👩‍🍳 Instructions

  1. 1

Preheat the oven to 170°C. Brush the entire inside of the pan with a little oil, then line the bottom with parchment paper to make it easier to remove the cake later.

  2. 2

Prepare a large bowl and add the flour, sugar, baking powder, baking soda, cinnamon, and salt. Stir gently until all the dry ingredients are evenly combined.

  3. 3

Add the oil, plant-based milk, lime juice, and vanilla. Stir gently using a hand mixer or spoon, just until the mixture comes together. Don't overmix, as this will cause the cake to become tough.

  4. 4

Pour the mixture into the pan, smooth the surface evenly.

  5. 5

Peel the apples, core them, then slice them into thin circles. Arrange the apple slices neatly in a circle from the edge of the pan towards the center. Sprinkle the remaining sugar and a little cinnamon over the apples.

  6. 6

Place in the oven and bake for 40 minutes. Check for doneness by inserting a toothpick into the center; if it comes out clean, it's done.

  7. 7

Remove from the oven, let it cool briefly in the pan, then transfer to a serving plate. Serve warm or at room temperature, depending on your preference. Your special treat is ready to be enjoyed!
