Pandan Coconut Tapioca Pudding

Panda Coconut Tapioca Pudding is a refreshing and creamy dessert, inspired by the rich flavors of Southeast Asia, made entirely from the goodness of nature or 100% plant-based! The chewy texture of sago pearls combines with the soft, savory coconut milk sauce, the natural fragrance of pandan, and the sweet, fresh pieces of mango. This dish is very special because it combines the right natural sweetness, a beautiful, appetizing appearance, and a cold sensation that quenches thirst and lengthens the tongue. It is perfect as a special dessert, a refreshing snack during hot weather, a treat for guests, or a sweet treat that is perfect for anyone to enjoy.

🛒 Ingredients

  • 100 grams of green/regular sago pearls, soak briefly
  • 400 ml thick coconut milk
  • 150 grams of coconut sugar/granulated sugar
  • 4 to 5 pandan leaves, tie in a knot or grind and strain the water.
  • A pinch of salt
  • One ripe mango, diced
  • Shaved ice (optional)

👩‍🍳 Instructions

  1. 1

Boil enough water, add the sago pearls, cook until transparent and perfectly cooked, then drain and rinse with boiled spring water so they don't stick together.

  2. 2

Boil coconut milk with sugar, salt, and pandan leaves over low heat while stirring continuously so that the coconut milk does not curdle. Cook until it boils slowly then turn off the heat and let it cool

  3. 3

Add the cooked pearl sago to the pandan coconut milk sauce, stir well

  4. 4

Serve in a glass or bowl, topped with fresh mango slices. Serve chilled with ice cubes for an even more delicious treat. Your special treat is ready to be enjoyed!
