Cripy pakora

Crispy pakora It is an iconic fried snack that is very popular in South Asia, made completely without eggs, milk, or other animal ingredients. Fresh vegetable pieces are coated in spiced horse bean flour batter, then fried until the outside is crispy and golden brown and the inside remains soft and fragrant. This dish is very special because it produces perfect crunchiness and an alluring spicy savory taste, relying only on the richness of plant ingredients. It is perfect for afternoon tea snacks, appetizers, guest treats or light meals that are loved by all vegans and all ages.

🛒 Ingredients

  • The main ingredient:
  • 150 grams of horse pea flour (gram flour)
  • 3 tablespoons rice flour (to make it crispier)
  • One onion, thinly sliced lengthwise
  • 100 grams of cabbage, finely sliced
  • One carrot, roughly grated
  • 50 grams spinach/spring onions, roughly chopped
  • Two red/bird's eye chilies, finely chopped
  • A pinch of baking soda (optional, to make it rise more)
  • Sufficient vegetable oil for frying
  • Spice:
  • 1/2 teaspoon turmeric powder, 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder
  • Salt and a little water to taste
  • Chopped fresh coriander leaves

👩‍🍳 Instructions

  1. 1

Mix horse bean flour, rice flour, all spices, salt, and coriander leaves. Pour in the water little by little while stirring until it becomes a thick, sticky dough (don't make it too runny).

  2. 2

Add all the vegetables to the mixture, stir well until all the vegetables are perfectly coated.

  3. 3

Heat the oil over medium heat. Take a tablespoon of the vegetable mixture and gently drop it into the hot oil.

  4. 4

Fry several at a time, don't overcrowd, turning them over until they are golden brown and evenly crispy.

  5. 5

Remove and drain the oil. Serve warm with chili sauce or vegetable mint sauce. Your special dish is ready to be enjoyed!
