🛒 Ingredients

  • The main ingredient:
  • 80 grams of red lentils, washed clean
  • 150 grams of roughly chopped button/oyster mushrooms
  • One onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • One carrot, cut into very small cubes
  • One stalk of celery, finely choppedOne stalk of celery, finely chopped
  • 400 grams of canned chopped tomatoes/fresh tomatoes, pureed
  • 2 tablespoons tomato paste
  • 250 ml vegetable stock
  • 3 tablespoons olive oil
  • Spices:
  • One teaspoon of oregano powder, one teaspoon of basil powder
  • 1/2 teaspoon cumin powder, a pinch of nutmeg powder
  • Salt, black pepper and a little coconut sugar to taste
  • A little vegetable soy sauce/salty tauco (for a deep savory flavor)
  • Fresh basil leaves and nutritional yeast (optional) for topping

    Heat olive oil, saute the onions until soft, add the garlic, carrots and celery, cook slowly until the vegetables are slightly soft.

    Add the chopped mushrooms and cook until the liquid has evaporated. Add the tomato paste, stir well, and cook for a minute.

    Add the red lentils, chopped tomatoes, vegetable stock, and all the spices. Stir well until boiling.

    Reduce the heat, cover the pan, and simmer for 30 to 35 minutes, stirring occasionally, until the lentils have broken down and the sauce has thickened. Serve.
