Kue lapis

Kue lapis It is a much-loved traditional snack, made completely without eggs, animal milk, or other animal ingredients. The texture is soft and chewy, layered with beautiful colors combined with the savory aroma of coconut milk and the right amount of sweetness. This dish is very special because it maintains the authenticity of its taste and iconic shape. Still delicious and appealing even though it only uses natural plant-based ingredients. It is perfect for everyday snacks, guest treats, desserts, or snacks that are loved by all vegetarians and all ages.

🛒 Ingredients

  • 200 grams of rice flour
  • 50 grams of tapioca flour
  • 600 ml thick coconut milk
  • 200 grams of granulated sugar/coconut sugar
  • A pinch of fine salt
  • Natural green dye from pandan leaves, red from dragon fruit/plant-based food coloring

👩‍🍳 Instructions

  1. 1

Boil coconut milk with sugar and salt while stirring until the sugar dissolves, then let it cool completely.

  2. 2

Mix the rice flour and tapioca flour, then slowly add the cold coconut milk while stirring until smooth. Strain the mixture to remove lumps.

  3. 3

Divide the dough into 2 to 3 parts, give a different color to each part.

  4. 4

Heat a steamer, grease a baking pan with a little oil. Pour in the first layer of batter and steam for 5 to 7 minutes until firm.

  5. 5

Pour the next layer of color and steam again until combined. Alternate layers until the batter is used up. Finally, steam the entire layer for 10 minutes to ensure it's fully cooked.

  6. 6

Remove from heat, let cool, and then cut to avoid damaging the layers. Your dish is ready to serve!
