🛒 Ingredients
- #Pancake skin ingredients:
- 120 grams of wheat flour
- 250 ml thick coconut milk or vegetable milk
- One tablespoon of vegetable oil
- 1 tablespoon powdered sugar
- A pinch of salt
- A little natural yellow coloring/turmeric (optional)
- #filling ingredients:
- 300 grams of ripe durian flesh, coarsely pureed
- 2 to 3 tablespoons of coconut sugar/fine sugar (according to taste of durian sweetness)
- A little thick coconut milk (if the durian is not moist enough)

Mix all the ingredients for the crust and stir gently until smooth and lump-free. Strain the mixture for a smoother crust.

Heat a nonstick frying pan over low heat, pour in 1 ladleful of batter, and spread it evenly in a circular motion until thin. Cook briefly until the skin is cooked through and easy to remove, then remove. Repeat until the batter is used up.
