🛒 Ingredients
- #The main ingredient:
- 500 grams of purple sweet potato, peeled and steamed until soft
- 5 to 7 tablespoons tapioca flour/glutinous rice flour
- 2 tablespoons of powdered sugar/coconut sugar
- A pinch of salt
- 100 grams of palm sugar, very finely grated (as filling)
- #coating ingredients;
- 100 grams of semi-ripe grated coconut + a pinch of salt (optional)
- Sufficient vegetable oil for frying
👩🍳 Instructions
- 1
Mash the peeled and steamed sweet potatoes until soft, then mix with sugar and salt. Add tapioca flour little by little while kneading until the dough can be shaped and does not stick to your hands.
- 2
Take a small amount of dough, roll it into a ball, and then flatten it in your palm. Fill the center with a generous amount of brown sugar, then seal it tightly and roll it back into a ball to prevent leaks during frying.
- 3
Roll the sweet potato balls in grated coconut if using, set aside.
- 4
Heat oil over medium heat. Add the sweet potato balls and fry gently, stirring occasionally, until evenly cooked and a beautiful golden brown color.
- 5
Remove from heat and drain the oil. Serve warm so the brown sugar filling can still melt completely. Your special treat is ready to be enjoyed!
