🛒 Ingredients
- #potato layer ingredients:
- 500 grams of yellow potatoes, boil until soft then peel
- 2 to 3 tablespoons olive oil
- 3 to 4 tablespoons fresh lime juice
- One teaspoon of yellow chili powder/aji limo, salt and pepper to taste
- #vegetable filling:
- Two ripe avocados, thinly sliced or mashed
- One ripe tomato, thinly sliced
- 100 grams of soft boiled white beans/shredded seasoned tofu
- Lettuce leaves or fine bean sprouts for a side dish
- #complementary sauce ingredients:
- 100 grams of soaked cashew nuts, mash with a little water/vegetable stock until thick and smooth
- A little garlic, salt and lime juice
- Fresh sprouts, sliced cherry tomatoes and a little coriander (for garnish)

Mash the potatoes while warm with olive oil, lime juice, salt, pepper, and chili powder until smooth and the sweet and sour flavors are just right. Let cool.

Prepare a small round mold and press half of the potato mixture evenly onto the bottom. Arrange the avocado, tomato, and other fillings neatly.

Cover with the remaining potato mixture, pressing gently to compact. Refrigerate for at least 30 minutes to allow the mixture to form a firm paste.

Remove the water from the mold, pour over the prepared thick cashew nut sauce.
