🛒 Ingredients

- Two medium-sized purple eggplants
- 3 to 4 ripe tomatoes, diced
- Three cloves of garlic, finely chopped
- 3 to 4 tablespoons of extra virgin olive oil
- 1/2 teaspoon cumin powder, 1/2 teaspoon sweet paprika powder
- A pinch of chili powder (to taste)
- Salt and black pepper to taste
- Chopped fresh parsley for sprinkling

Bake or steam the eggplant until the skin turns black and the flesh is very tender, then peel the skin and roughly mash the eggplant flesh.

Heat the olive oil, sauté the garlic briefly until fragrant, then add the tomatoes and all the spices. Cook until the tomatoes break down and the sauce thickens.

Add the eggplant, stir well and cook slowly for 10 to 15 minutes until the flavors blend perfectly and the oil separates slightly from the spices.
