🛒 Ingredients

  • #the main ingredient:
  • 300 grams of long grain rice, wash thoroughly
  • 500 grams of fresh/canned tomatoes
  • 2 onions, 4 cloves of garlic, 1 piece of ginger
  • 2 large red chilies, 1 tablespoon tomato paste
  • 400 to 500 ml vegetable stock
  • Oil, salt, coconut sugar and pepper to taste
  • #seasoning ingredients;
  • One teaspoon of sweet paprika powder
  • 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder
  • One bay leaf
  • A pinch of nutmeg powder (optional)
  • Fried plantains, fresh tomato slices, (complementary ingredients)
  • Basil leaves (for serving)

    Put the tomatoes, one onion, garlic, ginger and chili into a blender, then blend until the texture is smooth and even. If you want a smoother sauce, strain the ground spices to remove the seeds and skin of the tomatoes.

    Slice the remaining onion lengthwise, heat the oil in a pan and sauté the onion slowly until it wilts, smells fragrant and turns slightly brown. Add the tomato paste, stir well and cook for a while so that the bitter taste disappears and the aroma comes out.

    Add the prepared ground spices, add all the powdered spices, mix well and cook over medium heat for 10 to 15 minutes. Do this until the water from the vegetables reduces, the oil starts to separate from the spices and the color of the spices becomes a beautiful deep red.

    Add the washed rice, stir gently so that all the rice grains are evenly coated with the spices without damaging the grains. Pour in the vegetable stock, add bay leaves, salt, coconut sugar and black pepper to taste, then stir once more and let it boil.

    Once boiling, reduce the heat to the lowest level, cover the pan tightly. Simmer slowly for 20 minutes without opening or stirring frequently so that the rice cooks evenly, absorbs all the flavors of the spices and does not become mushy.

    Once the water has been completely absorbed and the rice is perfectly cooked, turn off the heat, let it sit for a while, then stir gently with a fork so that the rice grains break down nicely. Serve warm with accompaniments such as fried bananas, fresh tomatoes and basil leaves. Your special dish is ready to be enjoyed!
